I wanted to pop into your inbox with a bit of levity this week, particularly with my airy Peanut Butter Whipped Cream.
I was curious, and wanted to ask when was the last time you considered pancakes for dinner? Pancakes at night, mid-week, feel delightfully rebellious to me.
Plus, who doesn’t love stacking good things high as if they were some overwhelmed character in a Shel Silverstein book… just a more joyful one? Because when you have a Jenga-esque tower of pancakes on the verge of wobbling over it could only ever be a good thing. Too many pancakes and nowhere to put them…except up…what a nice problem to have. It visually screams “there is an abundance of goodness right here, right now!- a nice reminder I can appreciate any time of day, really. And whenever I whip up a batch of banana pancakes from a handful of pantry ingredients and a couple spotty bananas, I’m amazed by how there is always more than enough to make something so special from seemingly nothing at all and still live fruitfully.
